I always wanted to verify if it was actually impossible to have horses with different eye colors so I looked deep down into the files, I tested some things and turns out it was very possible to do so, so I’m here to share my discoveries ^^
(the horses used as “models” in this mod are Buell for the replacements of Blue eyes and Rachel for the replacements of Brown eyes)

To make my eyes work in your game you need to install the following files:
Script Hookο»Ώ: be sure to install the latest version available. After you have installed it, put the entire Script Hook folder in your RDR2 directory. If you’re using Steam Launcher, your directory should be somewhere around here = This Pc/Local Disc (C:)/Programs (x86)/Steam/steamapps/common/Red Dead Redemption 2;ο»Ώ
Lenny’s Mod Loader (LML)ο»Ώ: now copy everything inside the ModLoader folder and paste it into your RDR2 directory. You should now see the famous “lml” folder we’ll be using later, and also be sure to read the read me file inside the downloaded folder of the mod;
ο»ΏAsi Loaderο»Ώ: just place the file and version.dll into your directory. (Not sure if this is actually necessary but it makes online horse skins usable in story mode so I guess It’s very useful anyway).
After you’ve done all of this, open the “lml” folder and create a new folder and name it “stream”. You will place all the .ytd files here:
After you have downloaded a file from this mod, open it and you’ll see an image as example and a file like this: p_c_horse_01_teef_000_c0_000_ab.ytd
You just need to drag it into the “stream” folder you have created earlier.

These eyes ARE NOT new added eyes, they replace the already existing Brown and Blue eyes.
First you need to know which code replaces which eye:
p_c_horse_01_teef_000_c0_000_ab = This code replaces BROWN EYES;
p_c_horse_01_teef_000_c0_001_ab = This code replaces BLUE EYES.
So, for example, you do not want my Green eyes to replace Blue eyes but want them to replace Brown eyes instead, you just need to change a single number from p_c_horse_01_teef_000_c0_001_ab into p_c_horse_01_teef_000_c0_000_ab
